Mushroom Main Dishes
Come one, come all, join the mushroom train! Mushrooms are delicious and still wildly under-appreciated. While some folks might have been raised on the murky spongy flavors of white buttons and cremini, there is a steadily growing appreciation--and availability!--of other, much more interesting mushrooms. While waxing eloquent about my favorite types of mushrooms would be fun, this is not the place.
In the meantime, I hope you'll enjoy this collection of recipes that take full advantage of the savory, almost meaty flavor of mushrooms. My personal favorite is the Mussakhan-inspired sumac mushrooms, piled high with cucumbers and feta. If you're looking for a bit of spice, try the dry-fried mushrooms and celery, my spin on a dry-fried beef dish. Just add rice or noodles!
